Crackers:
2 Old Time Bakery Gluten Free Wraps of your choice
Spray olive oil
Baked Feta:
400 g block of feta cheese
1 tbsp olive oil
Zaatar seasoning
Honey
Fresh thyme leaves
Cracked black pepper
Method:
Preheat the oven to 180°C (bake).
Cut the gluten free wraps into any shape you like, spray lightly with olive oil, and bake for 8–10 minutes until crisp.
Switch the oven to fan-bake.
Place the feta in a small cast iron pan or oven-safe dish. Drizzle with olive oil and honey, then sprinkle with zaatar and thyme.
Bake for 10 minutes or until the feta is bubbling, oozy and golden.
Remove from the oven and serve on a platter with your homemade gluten free crackers.
Finish with an extra drizzle of honey, a sprinkle of zaatar, and a touch of salt and pepper if desired.
Notes & Variations:
Add roasted cherry tomatoes to the dish before baking for extra flavour.
Serve alongside sliced cucumber, radishes or fresh herbs for a fresh contrast.
Swap thyme for oregano or rosemary for a different flavour profile.
