Ingredients

4 cups cooked rice

1 tablespoon olive oil

500g beef mince (single serve estimate 125g)

1 packet store bought taco seasoning

420g can black beans, rinsed and drained

1 large avocado, stone removed and sliced into chunks

200g cherry tomatoes, halved

1 lebanese cucumber, sliced into chunks

1 fresh lime, sliced into 4 wedges

100g parmesan cheese, shaved

Fresh coriander to serve

Method

In a large frying pan over a high temperature, add the olive oil and the beef mince and pan fry until browned and almost cooked through. Add the taco seasoning and stir to combine. Remove the mince from the heat. Split all of the ingredients into 4 and create your meal prep bowls! These bowls can be stored covered in the fridge for up to 3-4 days.
