warm pumpkin & pear salad.
Serves: 4 people
Ingredients:
2 green pears, sliced into wedges
400g pumpkin, sliced into 1 inch chunks
1-2 cups freekeh, cooked as per the packet instructions
2 handfuls rocket or mixed greens
2 tablespoon olive oil 1 teaspoon cinnamon powder
Salt and pepper
3 tablespoons toasted seeds
Dressing ingredients:
2 tablespoons tahini
1 tablespoon maple syrup
1 tablespoon lemon juice
1-2 tablespoon warm water
Pinch of salt
Method:
Roast pear wedges and pumpkin with olive oil, cinnamon, salt and pepper at 200°C for 20-25 minutes.
Cook freekeh.
Whisk tahini, maple syrup, lemon and water.
Toss everything with greens and seeds.
Drizzle dressing and serve warm.
