Easy weeknight beef mince tacos.

Prep Time: 10 minutes
Cook Time: 10–15 minutes
Makes: 4 tacos (serves 2 people)

Ingredients:⁠
4 Old Time Bakery Gluten Free wraps⁠
200g beef mince ⁠
Mexican spice sachet (check the label for gluten-free!) ⁠
1 avocado, stone removed and mashed⁠
2 sliced tomatoes ⁠
1/2 red onion, sliced thinly⁠
Fresh lime ⁠
Fresh coriander leaves⁠
Tomato salsa or dressing of your choice ⁠

Method:
Preheat an oven to 180 degrees. ⁠
Use the outside of a small bowl to place onto your OTB wrap as a guide/stencil and cut around it carefully with the small sharp knife. ⁠
Spray the small circle wrap with olive oil and place onto a baking tray. ⁠
Place the baking tray into the oven and cook for 8 minutes / alternatively, fry in the air fryer on its own for around 4 minutes at 180 degrees "airfry". ⁠
Remove from the oven and place onto a wire rack to cool and crisp up. ⁠Pan-fry the mince in the Mexican spice for a few minutes or until cooked through. ⁠
Assemble your tacos starting off with a layer of smashed avocado, then the beef mince, etc. Finishing off with fresh herbs, salsa drizzle and a generous squeeze of fresh lime juice.
