Ingredients:
700–900 g Scottsdale Pork American-Style Tasmanian Pork Ribs
2 tbsp olive oil
Zest and juice of 2 limes
2 fresh red chillies, finely chopped
3 garlic cloves, crushed
2 tbsp honey
2 tbsp soy sauce or tamari
¼ cup tomato or BBQ sauce
2 tbsp apple cider vinegar
Salt and pepper

Method:
Preheat oven to 160°C fan-forced. Rub ribs with olive oil, salt, and pepper. Place on a lined tray, cover with foil, and bake for 2 hours until tender.
Combine lime zest and juice, chilli, garlic, honey, soy sauce, tomato sauce, and vinegar. Brush glaze over ribs and return to oven uncovered for 20 minutes, basting twice, until sticky and caramelised.
Toss cabbage, mango, mint, lime juice, olive oil, honey, salt, and pepper to make the slaw.
Serve ribs with slaw and drizzle with any leftover glaze.
