Makes: 1 tray of smashed sweet potatoes

Ingredients:
2 large sweet potatoes, cut into 1 inch thick rounds 
Salt and pepper

To serve:
Fresh thyme
Maple syrup drizzle

Method:
Preheat an oven to 180 degrees fan bake. 
Place the sweet potato rounds onto the baking tray. Drizzle with olive oil and sprinkle with salt and pepper.
Bake in the oven for 20 minutes.  
Remove from the oven and gently smash with the back of a fork. 
Return them to the oven for another 10 minutes or until the outer edges are crispy and cooked to your liking. 
Remove from the oven and transfer to a platter or side dish. Top with extra sea salt, a drizzle of maple syrup and fresh thyme to serve. 
Best consumed immediately.
