Prep & Cook Time: 25 minutes

Ingredients:
65g pitted dates, chopped
¼ teaspoon baking soda
6 tablespoons boiling water
30g unsalted butter, at room temperature
¼ cup brown or coconut sugar
1 small egg
½ cup + 2 tablespoons self-raising flour

Toffee Sauce:
¼ cup brown or coconut sugar
⅓ cup thickened cream
15g unsalted butter

Method:
Preheat oven to 180°C bake and line a small pan.
Soak dates with baking soda and boiling water for 15 minutes.
Cream butter and sugar until pale. Add egg and mix to combine.
Fold in flour and date mixture.
Bake for 20–30 minutes or until a skewer comes out clean.
For the sauce, combine ingredients in a saucepan and simmer until thickened.
Pierce the pudding with a skewer and pour the sauce over to soak before serving.

Notes & Variations:

  • Top with vanilla ice cream or cream for indulgence.
