Makes: 8 cookies

Cookies:
1 ½ cups spelt flour
½ cup coconut sugar or brown sugar
½ tsp baking soda
Pinch of sea salt
3 tbsp milk of your choice
2 tbsp melted coconut oil
110 g bag The Carob Kitchen Carob for Cooking Buttons

Method:
Preheat the oven to 180°C (bake) and line a baking tray with parchment paper.
In a medium mixing bowl, combine all ingredients and mix until a cookie-style dough forms.
Scoop tablespoon-sized amounts of dough and roll into smooth balls.
If the dough feels too sticky to roll, add 1 tablespoon of extra flour at a time until it’s easy to handle.
Place the cookie balls onto the prepared tray and gently flatten each one slightly with the back of a spoon.
Bake for 10 minutes, or until golden around the edges.
Carefully transfer to a wire rack and allow to cool completely.
Store in an airtight container in a cool, dry place for up to 4 days.

Notes & Variations:

  • Swap Carob Buttons for chopped Carob Chunks for a rustic-style cookie.

  • Add a sprinkle of sea salt flakes on top before baking for a salted carob flavour.

  • Use gluten-free flour for a gluten-free alternative.
