roasted tomato & burrata board

Dietary: Gluten free & vegetarian
Total Time: 20 minutes
Cook Time: 10-15 minutes
Prep Time: 5 minutes
Makes: 2-4 serves

Ingredients: 
1 tablespoon olive oil 
Sea salt & freshly cracked black pepper 
6-8 large tomatoes of your choice, or a combination of large and smaller tomatoes 
400g burrata cheese (approximately 2 pieces)

To Serve: 
6 slices of Gluten Freedom Pure Foodie Paleo Super Seeded Bread, toasted
Store bought basil pesto 
Fresh basil leaves
Sea salt & freshly cracked black pepper 

Method: 
Preheat an oven to 200 degrees fan bake. 
Line a baking tray with parchment paper. 
Slice the large tomatoes in half and arrange on the baking tray. Add any smaller tomatoes to the tray. 
Drizzle the tomatoes with olive oil and sprinkle with salt and pepper. 
Roast the tomatoes for around 10-15 minutes or until fragrant and roasted to your liking. 
Remove the tomatoes from the oven and allow them to cool whilst you prepare the rest of your board/platter. 
Arrange your board/platter with all remaining ingredients. Drizzle the platter with basil pesto, sprinkle with fresh basil leaves and extra cracked black pepper. 
Consume immediately.
