slow cooked lamb shanks.

High Cook Time: 8-9 minutes
Low Cook Time: 6 hours
Prep Time: 15 minutes
Makes: 2-4 serves (1 lamb shank between 2, otherwise double the lamb shank qty)

Ingredients:
2 lamb shanks
½ cup plain or spelt flour (sub for gluten free flour if intolerant)
3 tablespoons olive oil 
1 large onion, peeled and sliced into wedges
3 large cloves of garlic, peeled and minced 
400g canned cherry tomatoes 
¾ cup vegetable stock liquid or vegetable broth
½ cup dry red wine of your choice 
4 bay leaves 
5 sprigs of rosemary 
5 sprigs of thyme 
Sea salt and cracked black pepper

To Serve: 
Herbed mashed potato

  • Preheat a large 7 litre slow cooker pot. 
    Dust the lamb shanks with a thin layer of flour and rub into the lamb shanks. 
    In a piping hot large frying pan, pan fry the lamb shanks for a few minutes or either side to seal the meat before slow cooking.
    Allow the meat to rest whilst you prepare the slow cooker. 
    Add all remaining ingredients to the slow cooker. 
    Add the lamb shanks to the slow cooker and cover with spoonfuls of the liquid. 
    Slow cook the lamb shanks on low for 6 hours or high for 8-9 hours. 
    When the lamb is cooked through, the meat should be brown in colour, fragrant and fall off the bone easily with a fork. The inside of the meat will be of a brown colour. 
    Serve the lamb shanks with herbed mashed potato, spoonfuls of the tomatoes and onions from the slow cooker and drizzle with extra tomato and red wine sauce.
