Ingredients

Greek yoghurt sauce
1 cup Greek yoghurt or natural yoghurt
A generous sprinkle of chopped parsley leaves
1/2 lemon, juiced
1/2 cup water
1/2 Lebanese cucumber, grated

To serve
220g BBQ or grilled chicken of your choice
1 1/2 cups cooked rice
1 cup canned corn kernels
1/2 Lebanese cucumber, sliced into discs
hot honey

Method

Combine the yoghurt dressing ingredients in a medium sized bowl and set aside.
Assemble your bowls starting with a bed of cooked rice, add the corn kernels, cucumber and cooked chicken. Drizzle generously with the yoghurt dressing and hot honey to serve.
