Prep Time: 10 minutes
Makes: 8-10 waffles depending on your waffle machine size

Ingredients:
1 cup spelt flour
1 cup sweet potato puree
½ cup milk of your choice
2 eggs, room temperature
1 teaspoon baking powder
¼ cup maple syrup 
Pinch of ground ginger
Pinch of ground cinnamon
Pinch of salt

To serve:
Gingerbread cookies, crumbled - see our Gingerbread recipe!
Extra maple syrup

Method:
Combine all ingredients in a large mixing bowl with a whisk until well combined. 
Spray or grease a waffle maker with oil or butter of your choice. 
Pour the appropriate amount of batter into the waffle machine and cook until golden brown in colour and firm to touch, following your waffle maker instructions as required. Transfer the cooked waffle to a wire rack to cool completely. 
Repeat this process until all of your waffles have been cooked. 
Arrange as a stack of waffles, drizzle with extra maple syrup and crumble our delicious gingerbread cookies over the waffle stack to serve!
Best consumed immediately.
