Dietary: Vegetarian
Baking Time: 40 minutes
Makes: 1 loaf

Ingredients:
1 cup mashed cooked sweet potato, cooled
2 large eggs
1/3 cup white sugar
1/4 cup milk
1 teaspoon vanilla
3/4 cup (95g) plain flour
1/4 cup cocoa powder
1 teaspoon baking powder
1/4 teaspoon salt

Icing:
1 cup Greek yoghurt
2 tablespoons cocoa powder
2 tablespoons maple syrup, optional

Method:
Line a loaf tin that fits inside your air fryer with baking paper.
Whisk the eggs and sugar together until well combined.
Add the sweet potato, milk and vanilla and whisk until smooth and creamy.
Fold in the dry ingredients until just combined. Don't overmix.
Pour into the tin and smooth the top.
Air fry on the bake setting at 160°C for 40 minutes, or until a skewer comes out clean.
Cool completely in the tin before slicing. This is important for the texture.
Whisk the icing ingredients until smooth and spread over the cake just before serving. Store in the fridge for up to 1 week.

Tips:
Check the loaf at 35 minutes as air fryers vary.
Ice the loaf once it's completely cool.
