Makes: 12 mini cookies
Prep & Cook Time: 20 minutes
Ingredients:
57.5g unsalted butter, diced into cubes
½ cup brown sugar
¼ cup vanilla yoghurt
½ cup + 3 tablespoons spelt or wholemeal flour
½ teaspoon baking soda
Pinch of sea salt
100g chocolate chips or drops
Method:
Preheat an oven to 190°C bake and line a baking tray with parchment paper.
In a mixing bowl, cream the butter and sugar until light and fluffy.
Add remaining ingredients and fold together until well combined.
Roll teaspoon-sized amounts of dough into balls and place onto the tray.
Bake for 9 minutes or until golden.
Cool on the tray for 15 minutes before transferring to a wire rack.
Notes & Variations:
Store in an airtight container at room temperature for up to 5 days.
Swap choc chips for white chocolate and cranberries for a festive twist.
