Prep & Cook Time: 20 minutes

Blini Pancake Ingredients:
1 cup spelt flour
1 teaspoon baking powder
¾ teaspoon salt
1 large egg
¾ cup milk

To Serve:
120g cream cheese
100g smoked salmon
Handful chopped chives
Sea salt and cracked black pepper

Method:
Whisk flour, baking powder, and salt together.
Add egg and milk, whisk until smooth.
Heat a frying pan over medium heat, grease lightly.
Spoon 1 tablespoon batter per blini and cook 1–2 minutes each side.
Cool on a wire rack.
Spread with cream cheese, top with salmon, chives, and seasoning.

Notes & Variations:

  • Replace salmon with prosciutto for a meat version.

  • Add lemon zest for brightness.
