Mini lunchbox apple & raisin scrolls

mini lunchbox apple & raisin scrolls.

A simple, lunchbox-friendly twist on a classic scroll, filled with softly spiced apples and sweet raisins. Store-bought puff pastry keeps it quick, while Pink Lady and Granny Smith apples balance sweet and tart.

Dietary: Vegetarian
Baking Time: 20-25 minutes
Makes: 6 mini scrolls

Ingredients:
1 sheet store-bought puff pastry, thawed
2 apples (Pink Lady and Granny Smith), finely diced
2 tablespoons brown sugar
1 teaspoon ground cinnamon
2 tablespoons raisins or sultanas
1 teaspoon lemon juice

Method:
Preheat the oven to 200°C (180°C fan). Line a baking tray with baking paper.
In a bowl, combine the diced apple, brown sugar, cinnamon, raisins and lemon juice.
Spread the apple mixture evenly over the pastry sheet, leaving a small border along one long edge.
Roll tightly and evenly from the long side into a log, then slice into 6 even scrolls.
Place the scrolls cut-side up onto the baking tray, leaving space between each.
Bake for 20-25 minutes, or until golden, puffed and cooked through.
Cool slightly on a wire rack. Store in an airtight container for up to 3 days.
