Satay Dressing:
2 tablespoons peanut butter
1 lime wedge, juiced
1 tablespoon sesame oil
1 tablespoon rice wine vinegar
1 tablespoon brown or coconut sugar
½ cup thickened cream
Pinch of chilli flakes

Ingredients:
200g vermicelli noodles, cooked
250g firm tofu, diced
1 carrot, julienne sliced
1 red chilli, thinly sliced
Fresh mint and coriander leaves

Method:
Whisk all dressing ingredients together until smooth and creamy.
Assemble bowls with noodles, tofu, vegetables, and herbs.
Drizzle with satay dressing to serve.
