Makes: 2 serves

Ingredients:
2 tablespoons Malacca Laksa Nyonya Noodle Soup Paste - Hot
6-8 large green prawns, shelled and prepped
1 cup water
400g coconut milk
Noodles of your choice, cooked and drained​​

To Serve:
1 bunch bok choy, trimmed and washed
Handful snow peas, trimmed and sliced thinly
Fried shallots
Sliced red chilli
Fresh mint leaves
Fresh lime

  • Add the Malacca Laksa Nyonya Noodle Soup Paste to a medium sized saucepan over a high heat. Stir for a few minutes. Add the water and coconut milk and stir until combined.
    Add the prawns and reduce the heat to a low - medium simmer. Simmer for around 5 minutes or until the prawns are red / pink in colour and the meat is opaque white and no longer translucent.
    In 2 serving bowls, add the cooked noodles and top with the laksa curry sauce and prawns. Serve with bok choy, sliced snow peas, fried shallots, red chilli, mint leaves and a squeeze of fresh lime juice.
    Consume immediately.
