Pork Steak Ingredients:
400–700g Scottsdale Pork Tasmanian Scotch Steaks
1 tablespoon olive oil, for brushing
Sea salt and freshly cracked black pepper

Zesty Lime Herb Sauce Ingredients:
½ cup fresh parsley, finely chopped
½ cup fresh coriander, finely chopped
1 shallot, peeled and finely diced
1 garlic clove, peeled and minced
Zest of 1 lime
Juice of 1 lime
½ cup olive oil
Pinch of sea salt and freshly cracked black pepper

  • In a small bowl, combine all of the dressing ingredients and set aside.
    Pat the pork steaks dry with paper towel and brush lightly with olive oil. Season well with salt and cracked black pepper.
    Preheat a large grill pan or BBQ to medium-high heat.
    Place the pork steaks onto the grill and cook for 4–5 minutes per side, or until charred and cooked through to your liking.
    Transfer to a plate or board and rest for 5 minutes before slicing.
    Serve warm with a generous drizzle of the zesty lime herb dressing.

    • Add a touch of honey or chilli flakes to the dressing for extra kick.

    • This dressing also pairs perfectly with grilled chicken or seafood.

    • Serve with roasted potatoes or a fresh garden salad for a complete meal.
