Quesadillas:
Old Time Bakery Gluten Free Wraps
Mozzarella cheese, grated
Zaatar spice blend
Olives of your choice (chilli-stuffed if you like it spicy)
Flaky sea salt

To Serve:
Your favourite dipping sauce (optional)

Method:
Preheat a large non-stick frying pan or sandwich press over medium heat.
Lay one wrap flat and scatter a generous layer of mozzarella evenly over half of it.
Sprinkle zaatar spices over the cheese, then add a few sliced olives for extra flavour.
Fold the wrap in half to enclose the filling.
Place the folded wrap into the pan and cook for 2–3 minutes on each side, pressing gently with a spatula, until the wrap is golden and crisp and the cheese has melted.
Remove from the pan and sprinkle with a pinch of flaky sea salt.
Slice into wedges and serve immediately with your favourite dipping sauce.

Notes & Variations:

  • Add sliced roasted capsicum or baby spinach for extra texture and flavour.

  • Try swapping mozzarella for a mix of mozzarella and feta for a tangy twist.

  • Serve with a yoghurt and tahini sauce or a simple garlic yoghurt dip for extra flavour.
