A rolled pork loin with crunchy crackling, roasted with honeyed apples, pears and red onions.
Dietary: Gluten Free, Dairy Free
Cooking Time: 1-1 1/2 hours, plus overnight drying
Serves: 6
Ingredients:
1 pre-scored, rolled pork loin
1/2 cup sea salt
1/4 cup olive oil
To Roast:
3 pears, halved
3 apples, quartered
3 red onions, quartered
3 tablespoons honey or maple syrup
Fresh thyme leaves
Method:
Rub salt all over the pork skin, massaging it into the scoring. Leave uncovered in the fridge overnight to dry out.
Brush off the salt, brush the pork with olive oil and re-salt the skin.
Preheat the oven to 250°C. Roast the pork in a roasting dish for 30 minutes, until the skin starts to crackle.
Reduce the oven to 200°C. Add the pears, apples, onions, honey and thyme to the dish and roast for another 30-45 minutes, until the juices run clear or faintly pink (about 63°C internal).
Rest for 15 minutes before slicing.
Cooking Tips:
Salting the skin overnight dries it out for the crunchiest crackling.
Allow around 30 minutes per kilogram.
Storage:
Store leftover pork in the fridge for up to 3 days.
